Ingredients

Chopped potatoes 1/2
Thick beaten rice (poha) 2cups
Oil 1 tbsp
Mustard seeds ( rai / sarson) 1/2 tsp
Cumin seeds (jeera) 1/2 tsp
Green chillies 3
Curry leaves (kadi patta)5
Chopped onions 1/2 cup
Turmeric powder (haldi) 1/4 tsp
Lemon juice 1 tsp

Coriander leaves
Salt as required

Method

Firstly wash the poha under running water. Drain out the water and keep it aside.
Heat the oil in a non-stick pan add mustard seeds, cumin seeds and curry leaves.
Add the potatoes, onions, green chillies, salt and turmeric powder, mix well and fry it for 3-4 minutes(only light brown).
Now add the poha to above mixture mix well and fry for 1 minute.
Add the lemon juice and mix well.

Garnish with leaves of coriander and serves hot.
